Don’t over-think it

Most diners are oblivious to how well a wine went with their food. They are more interested in socializing rather than in analyzing tastes. 

That’s OK. Meals out with family or friends don’t have to center on specific tastes. They are meant for enjoying the company and conversation with others. That’s their main purpose.

The net result is that only a small subset of your guests will think about the wine and how it goes with the food. And how often you will serve this type of guest depends upon the type of restaurant you are working at. These food and wine lovers will be found more in fine dining restaurants than in local comfort food restaurants.

That’s just the way it is.
