The result is that any comments about wine and/or food that guests give you have to be tempered by how much effort is put into thinking about tastes.

Even the overly critical foodie wine lover can give you comments that should be listened to and not ignored. Yes – it is true that many other guests may not have picked up on a problem but that is because they haven’t really thought about what is wrong with a food or wine they don’t like and what might improve the tastes.

Even if a guest now opens up after you ask how everything could have been better and gives you a negative comment about their food and wine, they are still likely to give you a full gratuity because that taste of the food and the taste of the wine was beyond your control. With honest comments, a guest usually remembers not “to shoot the messenger.”
