2) With a dish that is predominantly savory, pair it with a lower acid wine or an acidic wine that is balanced with residual sweetness.
If a high acid wine meets a savory food, then acidity in the wine is heightened making it seem more out of balance. A low acid wine keeps a savory dish savory and makes the wine seem richer and smoother. Residual sweetness in wine actually makes it more “savory.”
