Section 3 – Chilling wine at the table

Unfortunately, many restaurants do not have their wine stored at the best drinking temperature. As a server, you may want to correct that if it’s ok with the guest.

So how do you get a bottle of white, rosé, or sparkling wine, from a room temperature of 72 deg F. down to a serving temperature of 50 -55 deg F. (white or rosé wine) or 45 deg F. (sparkling wine) as fast as possible?

Putting it in a refrigerator or freezer will take way too long. Even putting the bottle in a bucket of only ice may take 30 minutes.
