Section 1 – the Wine List Presented
Offer your restaurant’s wine lists to everyone at the table. If more than 4 people are at a table, bring several wine lists when you first come to the table.
Never assume only one person will look at the list. You will have a better chance to sell more wine if everyone sees what wines are available.
This is especially true if you have a wine-by-the-glass list because it allows guests to choose a wine they know they like or choose one that goes well with the menu food item they already think they are going to order.
If no one at the table seems initially enthusiastic, ask if there is a certain person who would want to select a wine for the table while also offering to help with suggestions.
You do know all the wines on your establishment’s wine list and how to pronounce their names, don’t you?
Then don’t hesitate to ask if they would like a certain wine to start off with.
