Section 2 – Wines in Stock
You can’t sell or even suggest a wine if you don’t know what’s available. Study the restaurant’s wine list and double-check to know that what is on the list, and is actually in stock and purchasable by guests.
Are there some other bottles available, but not on the printed wine list, because they are in short supply? Management might be thrilled if you would suggest those to a guest and the guest might feel they are getting a special deal.
