The goal of the pairing

The Engaged Newcomers and the Confused/overwhelmed always take more of your time and attention when recommending wines because of the questions they have and the help that they need in choosing specific wine.

For these guests, you must not only know the characteristics of almost all of the wines on the list, but you may also want to have on the tip of your tongue the names of several of your restaurant’s most popular wines that are repeatedly ordered

It may also be productive to ask the person choosing the wine by the bottle if he/she is primarily interested in just a relaxing, sipping (meditation) wine for the initial beverage, or whether they want the wine to pair with an appetizer or entree food choices the table is about to order. 

In the latter case, the choice of wine may need to follow any food order. And in the last lesson, you learned how to recommend wines to match for food.

Meditation wines are different from food wines, however. They are meant to be consumed like cocktails to relax rather than made to go with the full range of foods that a group might order.
