Basic food tastes to pair with wines

We are taught that there are basic tastes that we can clearly identify.

Acidity
Sweetness
Bitterness
Savory (umami)
Salty

1) Acid (tartness, sour) – examples:  lemon, lime, any citrus juice, vinegar, or wine itself;

acidic foods such as tomatoes, corn (it is also sweet), coffee, liver, and other organic meats; other fruits such as apples, cranberries, plums, and rhubarb;

yogurt, sour cream, buttermilk, and aged cheeses.
