Check with the establishment where you work as to what equipment and supplies are available for decanting wine.
Do they have wine decanters?
Do they have a light to shine under the neck of the wine bottle to see any sediment coming when pouring into the decanter?
Keep in mind – DO NOT decant or aerate any sparkling wine; but rather pour the wine down the side of the glass like you would a foamy beer
No decanting of white or rosé still wines
Without a decanter, only aerate by just pouring the wine in the center of the glass. This is usually enough to volatize any excess sulfur dioxide (SO2)
Decant any red wine that a guest asks to be decanted and for all red wines greater than 10 years of age, offer to decant that wine
Sometimes a knowledgeable wine lover will ask to taste an older wine before it is decanted to determine if the wine needs to be decanted.
