Sediment on the side of an older bottle

If your restaurant is fortunate enough to have bottles of red wine with a vintage of over 10 years, any sediment may lie along one wall of the bottle if that bottle has been stored lying on its side. 

You must be very careful when removing the bottle from its rack so as not to disturb the sediment.

Gently remove the bottle from the wine rack and without rotating it, hold it up to the light and look for a dark line along the bottom side of the bottle. If there is no sediment, you probably will not need to decant the bottle before serving.
