If you have a manager who says on the first round you should pour 5 or 6 oz of wine in each guest’s glass from the bottle, you will have to do so. But it’s probably not the best way to do it.
It is best to pour less than that, say 3 or 4 oz in a glass, so you have some wine left over to refill the glass(es) of any guest who drinks somewhat faster. We suggest that you initially pour 1/2 – 2/3’s of the bottle into guests’ glasses. That way you will still have some wine to top off the glasses of those guests who consume their wine faster.
Remember, you want to have all of the guests finish their wine at about the same time.
Plus this brings you back to the table more frequently to pour more wine into their glasses and show them how attentive you are to giving them great wine service. It will be reflected in their appreciation.
