If the wine you present is not the one they want, or if they change their mind, offer to return with a bottle they would prefer.
Unfortunately, there are guests that will let you open the bottle without their confirming the right choice and once it is open, they will offer to drink that bottle followed by the correct one you bring next. But they don’t expect to be charged for the incorrect bottle.
You may think this is too cynical but be warned.
