What about serving red wines in warm climates such as the Caribbean in Florida and anywhere outside in the hot summer.

Is it reasonable for a guest to not want to drink red wine at 85 deg F.?

Of course!

Bring a wine bucket with ice water for the red but just leave it in for 5 minutes and make a show of removing it, pouring it, and asking if the guest would like it to stay chilled or stay out of the ice bath for a while.
