By-the-glass gives you more sales

Remember that pairing a glass of a sparkling, white, or rosé wine with an appetizer course and a red, a white, or a rosé with an entrée may give you some wine sales when the rest of the table is not interested. 

Most by-the-glass pricing is about ¼ of a bottle price and if a 6-ounce pour is given, there really is not much savings to the guest by ordering a full bottle if they alone are drinking it.
